If you’re like us, you made so much turkey and so many side dishes that even now, two days after the big day, you’ve still got a ton of food from your big feast. But no worries, we’ve got 10 ways to help you clean your fridge – by creating delicious meals from your holiday leftovers!

1. Mashed Potato Pancakes

Sure mashed potatoes are great on Thanksgiving, but after the fact, they seem to be less than desirable. Instead of tossing them, mix in some fresh herbs and an egg, then fry ‘em up on the griddle!

 

 

 

 

2. Roasted Turkey Sandwiches

Nothing beats leftover turkey (and we mean nothing!). Whether you snack on it or toss it into a sandwich, you’ll be glad that you’ve got extra meat for days to come. We like it simple, on white bread with a smear of mayo and maybe a couple of slices of Swiss cheese, but if you wanna jazz it up, try putting some meat on focaccia with a red pepper aioli, red onion and Havarti cheese.

3. Risotto – Thanksgiving style

One thing you normally don’t get at most Thanksgiving feasts is risotto....so why not use

the leftover turkey, corn and maybe even some cranberries to make one wicked risotto! Mama mia!

 

 

4. Ham & Green Bean Soup

Take those leftover pods and whip up some delicious ham and green bean soup. Start by using a ham hock to make the ultimate broth, then add whatever you’d like!

 

 

5. Stuffed Peppers with Stuffing

It may seem an unlikely combination (or maybe not, given the name!) but try filling some halved bell peppers with stuffing before roasting them for an amazingly festive leftover treat.

6. Cranberry (or Apple) Mini-Tarts

Take your leftover cranberry or apple sauce and bake yourself a little post-holiday treat – you deserve it! Use some flaky pie crust to make delicious mini-tarts and enjoy!

 

7. Turkey Noodle Soup

Warm your soul with a great alternative to chicken noodle soup. It tastes just as good & is way more healthful!

 

 

8. Blackened Corn Chowder

Transform your leftover creamed or roasted corn into blackened corn chowder soup by roasting it under the broiler for a few minutes. Add some black beans, sour cream and some chives and you’ve got yourself a Thanksgiving turned Mexican dinner. Olé!

9. Sweet Potato Pie

Just because Thanksgiving Day is over doesn’t mean you can’t enjoy some pie...rather than pumpkin, use your leftover sweet potato casserole for a simple alternative to this holiday classic.

 

10. Homemade Gnocchi

Not a fan of potato pancakes? Another great way to use your leftover mashed potatoes is to make your own homemade potato gnocchi!
